Tonia Wilson is a certified sommelier and chef, a regular contributor to the LCBO’s Food & Drink magazine and the author of the recently released book Beer At My Table. Tonia spent many years working in Europe as head chef at Canada’s embassies in Rome and Brussels. She is certified with the Associazione Italiana Sommelier and is a Prud’homme-certified beer sommelier. Tonia teaches about food and beer through tastings and events. Tony Armstrong and his wife Linda bought their family farm in the fall of 2012 to live a more peaceful and self-sustainable existence, closing the gap between field and table. Set in the rolling hills of Northumberland County, their 120-acre farm is a mixture of field, forest and wetland with a beautiful view of Lake Ontario. The farmhouse is an eco-friendly, sustainable, straw-bale home that was designed and built as a modern farmhouse that accommodates family and business. Headwaters Community Farm grows organic food using permaculture and other ecological methods that Tony and Linda learned when they and their family volunteered on farms around the world. With the help of family, on-farm partners and many volunteers, they have built sustainable vegetable gardens and food forests, managed field crops and raised bees, chickens, goats, the occasional Highland cattle and soon sheep. Headwaters Education Centre and teaching kitchen offers workshops, retreats and special events focusing on sustainable living, homesteading skills and health and wellness.
